My box contained:

1 meal kit for Aloo Paratha with Mustard Seed-Scented Eggplant (8 oz Yukon Gold potatoes, 8 oz eggplant, fresh ginger, 1 lemon, 1 tsp curry powder, 1 onion, 3 garlic cloves, 1 can diced tomatoes, fresh mint, fresh cilantro, 2 whole wheat tortillas, and 1 1/2 tsp mustard seeds)

1 meal kit for Chilaquiles with Edamame Guacamole and Pickled Carrots (1 onion, 2 garlic cloves, 1 can crushed tomatoes, 1 tsp ground chipotle, 1/2 cup cider vinegar, 1 tablespoon turbinado sugar, 1/2 teaspoon mustard seeds, 12 oz carrots, 3/4 cup edamame, 1 lime, 1 avocado, 1 scallion, fresh cilantro, and 6 oz tortilla chips)

1 meal kit for Whole Wheat Fusilli with Mushrooms, Fennel, and Pecans (8 oz cremini mushrooms, 1 fennel bulb, 8 oz whole wheat fusilli, fresh parsley, fresh tarragon, and 6 tablespoons roasted pecans)

The Verdict...

I LOVE this box. The shipping is super fast. Kevin's customer service was superb. The value is wonderful for what you receive. If you add the price of what these products would cost you in the store, the price of shipping, and the value of your time for not having to go grocery shopping plus the cost of gas that would make this box extremely higher in value than what you pay for it. The products are so fresh and positively scrumptious. All the ingredients are vibrant in color and are without a doubt the best you can find.

The Whole Wheat Fusilli with Mushrooms, Fennel, and Pecans was my favorite which wasn't surprise as mushrooms are one of my favorite things in the world. I wasn't really sure if I'd care for the fennel as it has a black licorice flavor which I do not care for but it actually all went very well together.











The Chilaquiles with Edamame Guacamole and Pickled Carrots was wonderful. I was a little disappointed at first because this recipe required you to have a food processor and mine had recently broke so it didn't seem quite accessible for everyone to make. Fortunately I ran to my father's house and grabbed his and was able to make it because it was yummy. I love vinegar  (I can drink it from the bottle) and I believe the tang from the vinegar  ("pickled carrots") really made this recipe.

The Aloo Paratha with Mustard Seed-Scented Eggplant was definitely something different than what I would normally eat. I decided to venture out and give it a try anyways. I am happy I did. The potato filled tortilla reminded me of a perogie and was mouthwatering good. The eggplant "salsa" mixture complimented it well. I did omit the ginger as I had a bad aversion to ginger during my last pregnancy and unfortunately I still can't stomach it. I believe it still tasted fantastic regardless.
